Instructions
Step 1: Make the Dough
In a large mixing bowl, combine flour, salt, sugar, and yeast. Gradually add in olive oil and mix until a shaggy dough forms.
Knead the dough for 10 minutes on a lightly floured surface until it becomes smooth and elastic. Place the dough in a greased bowl, cover it with plastic wrap, and let it rise in a warm place for 1 hour, or until doubled in size.
Step 2: Prepare the Toppings
While the dough is rising, prepare the toppings by caramelizing the onions (see note) and chopping fresh rosemary leaves. Set aside.
Step 3: Shape the Dough
Preheat oven to 425°F (220°C). Punch down the risen dough and divide it into two equal portions. Roll out each portion into a thin circle, about 12 inches in diameter.
Transfer the dough to a baking sheet or pizza stone lined with parchment paper. Brush the edges with olive oil.
Step 4: Add Toppings
Spread caramelized onions evenly over the center of each flatbread, leaving a 1-inch border around the edges. Top with chopped rosemary leaves and minced garlic cloves.
